  • Heat oven to 325°F.
  • Crush 12 cookies finely; place in medium bowl. Add butter; mix well. Press onto bottom of 9-inch springform pan. Bake 10 min. Meanwhile, cut remaining cookies into quarters.
  • Beat cream cheese, sugar and vanilla in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Gently stir in quartered cookies. Pour over crust.
  • Bake 1 hour or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.

Use bottom of a straight-sided glass to evenly press the cookie crumb mixture onto bottom of springform pan.

Rated 5 out of 5 by from I made this cheesecake for Valentine's Day. I made this cheesecake for Valentine's Day. I took some to my daughter at college. She and the other girls said it was "Delicious". They said, "Who needs a date for Valentine's Day when you have cheesecake." I used a 10 1/2" springform pan and it was still nice and thick. It got a few cracks on top so I just crushed up 6 more Oreo cookies and put them on top. I also used some ground nut on top the cookie crumbs in the shape of a heart. The cheesecake was a big hit with everyone who ate it! Thanks for a great addition to my cheesecake list. I always use a piece of greased parchment paper cut to fit my pan and my cheesecakes come off the bottom of the pan really easy.

I'ver tried all other cheesecakes and always got sick of it after eating a few times. This recipe, ironically, got me addicted!

I used fat free cream cheese, Sugar Free SnackWells choc. sandwich cookies w/ unsweetened applesause for the crust, sugar substitute, 5 egg whites, and this cheesecake turned out to be a superb low fat, sugar free dessert!

It was a HUGE hit. I definitely recommend cooking it the day before and refrigerating overnight. It was MUCH better the next day.
