  • Toss shrimp and onion with 1/2 cup of the dressing; cover. Refrigerate 1 hour to marinate. Drain; discard marinade.
  • Divide greens among 4 salad plates. Arrange fruit and shrimp over greens.
  • Serve topped with remaining 1/2 cup dressing.

Substitute

Substitute sliced strawberries for the raspberries and/or mango chunks for the papaya chunks.

When you get a salad, you can tell that the chef is competing with all the other chefs on the island for your attention. Well, often creativity does not spell good eating! So I was eager to try this recipe, with rather exotic ingredients that to me sounded good together. You and I were right. This is an excellent salad that could become an elegant, light dinner for those steamy days of summer ahead. Not for kids, but for you and your beloved or with friends: wonderful!

Rated 4 out of 5 by from I have made this recipe twice. I have made this recipe twice. The first time I did not use Papaya or Kiwi.I used Mango and blackberries with Red Wine Vinnegrett. Along with shrimp and yellow and red tomatoe. Absolutely fantastic. The second time I made it according to the directions and it was too much with the Kiwi & Papaya. and Raspberry vinnegrett. Prefer the first way I made it.
