  • Heat oven to 350ºF.
  • Cook and stir bacon in large skillet until crisp; drain. Brown ground beef with onions and peppers in same skillet. Remove from heat; stir in bacon, tomato sauce, olives and raisins.
  • Spoon into 13x9-inch baking dish sprayed with cooking spray. Prepare muffin batter as directed on package; stir in cheese. Spread over meat mixture.
  • Bake 20 min. or until toothpick inserted in center of cornbread comes out clean. Serve topped with sour cream.

Serving Suggestion

Serve with your favorite steamed vegetable to round out the meal.

Bump up the flavor by stirring chopped chipotle peppers or fresh chives into the muffin batter before using as directed.

    I used Jiffy cornbread mix. You really need two boxes for this. This is delicious.

    I've made a casserole like this for years that my family loves that may be simpler. Brown ground beef, add slooppy joe mix (mild or bold, depending on family preference), add green beans or corn, top with cornbread batter (with or without cheese) then bake. My one girl insists on this every year for her birthday.
