Country Cheese Soup

Sharp cheddar adds just the right amount of cheese flavor to this creamy soup. Serve it alongside sandwiches for a hearty lunch or light supper.

what you need

cup  shredded carrot
cup  thinly sliced celery
Tbsp.  finely chopped green pepper
Tbsp.  finely chopped onion
cup  (1/2 stick) butter or margarine
cup  flour
tsp.  salt
Dash  black pepper
cups  milk
pkg.  (8 oz.) CRACKER BARREL Sharp Cheddar Cheese, shredded (2 cups)

Make It

COOK vegetables in butter in large saucepan on medium heat until tender, stirring frequently.

ADD flour and seasonings; mix well. Cook 2 minutes or until bubbly, stirring frequently. Gradually add milk, stirring until well blended. Cook until mixture boils and thickens, stirring constantly. Reduce heat to low; simmer 5 minutes.

ADD cheese; cook until cheese is melted and mixture is heated through, stirring constantly. Do not boil.
