  • Heat oil in large nonstick skillet on medium heat. Add vegetables; cook 5 min. or until potatoes are lightly browned, stirring occasionally.
  • Add eggs, 1 at a time, to skillet, spacing eggs evenly over potatoes; cover. Cook 3 to 4 min. or until egg whites are set and yolks begin to thicken but do not become firm.
  • Sprinkle with cheese; cook, covered, 1 min. or until melted.

Serving Suggestion

Serve with a fresh fruit salad.

Variation

Prepare as directed, using KRAFT 2% Milk Shredded Cheddar Cheese and substituting 1 cup cholesterol-free egg product for the 4 eggs.

Going by the photo, it looks like the egg was cooked separately then put on top (it's that nice round edge that gives it away). To those of you that have made it, did the egg go down into the potato mixture? I hate to rate before trying, but it wouldn't let me post without rating. I gave it a 5 because I'm sure it's going to be great!

Took quite a bit longer to cook than I expected - I had to turn the heat up to Med-High to finish browning the potatoes. It was worth the wait though! I used potatoes in a can and red peppers with red onions, because that was all I had in the fridge. I cut back on the butter.

It not only was easy to make, but extremely delicious. I have to say that the potatoes I used were the small red potatoes. Again, this is very good & I will definitely make it again & again. Added a little bit more flavor . They also used candian bacon as the meat an canadian sharp cheddar for the cheese . Either way it is a good breakfast recipe

I made something similar but instead of setting the eggs like the recipe said...I just crack the eggs over and mix it all up until the eggs are cooked. Then I add shredded cheese.
