What You Need

pkg.  (8-1/2 oz. each) corn muffin mix

slices  cooked OSCAR MAYER Butcher Thick Cut Hickory Smoked Bacon, chopped
3/4
cup  frozen corn
1/2
cup  chopped red bell peppers
1/4
tsp.  ground red pepper (cayenne)
1
cup  buttermilk
2
 eggs

Make It

HEAT oven to 450ºF.

MIX first 5 ingredients in large bowl. Add remaining ingredients; stir just until blended.

POUR into 12-inch cast iron skillet.

BAKE 18 to 20 min. or until golden brown. Cool slightly.

Prepare batter as directed; pour into 9-inch square pan sprayed with cooking spray. Bake 20 to 25 min. or until golden brown.
Substitute
Don't have buttermilk? Just add 1 Tbsp. white vinegar or lemon juice to 1-cup measuring cup, then add enough milk to measure 1 cup. Stir. Let stand 5 min. then use as directed.
