  • Preheat oven to 400°F. Beat eggs, dressing and milk in large bowl. Stir in corn muffin mix just until moistened. Add pork rings; mix lightly.
  • Spoon evenly into greased 13x9-inch baking pan; smooth top.
  • Bake 25 to 30 min. or until golden brown.

Spicy Cracklin' Cornbread

Prepare as directed, adding 1/2 tsp. ground red pepper (cayenne) to the batter before spooning into prepared baking pan.

Cracklin' Cornbread Muffins

Prepare as directed, spooning batter evenly into 16 paper-lined medium muffin cups. Bake at 400°F for 15 to 20 min. or until golden brown. Makes 16 servings, 1 muffin each.

Made with one box corn bread mix- followed directions with following exceptions-cut to only 1 egg, omitted pork rinds, added cheddar cheese, and about 1 tsps. melted butter to baking pan. Great results! Corn bread moist, tasty. Will use again trying other ingredients i.e. crumbled turkey bacon, peppers.

My husband prefers the corn muffin mix. I can eat this as a meal with just a small glass of milk. Don't leave out the cracklin's. That's the best part.

Rated 5 out of 5 by from When i made this i thought there was to much cracklins. When i made this i thought there was to much cracklins. used about 2 c. of cracklins and also added jal. that were diced and about 1/3 c. cream style corn. sprinkled shreeded cheese over top. everyone loved it.
