I've made this for years using my favorite buttermilk cornbread recipe. My husband prefers the corn muffin mix. I can eat this as a meal with just a small glass of milk. Don't leave out the cracklin's. That's the best part.
i halved the recipe and made muffins. they looked beautiful, but were dry and crumbly, and they seemed to lack something in taste.
so i made this recipe minus the porkrinds.. i guess it's not really cracklin' then.. but it was good.
