  • Mix flour, baking powder, cinnamon and baking soda; set aside. Mix apples, sugar and margarine in large bowl. Add egg product; mix well. Add flour mixture; stir just until moistened. (Batter will be thick.) gently stir in cranberries and walnuts.
  • Spread batter into greased 8x4-inch loaf pan.
  • Bake at 350°F for 1 hour or until toothpick inserted in center comes out clean. Let stand in pan 10 minutes. Remove from pan. Cool completely on wire rack.

After making this bread for Christmas dinner, I tried making it as muffins and worked out well. Just spray muffin tins with nonstick spray, fill cups 2/3 full and bake 350 for 15 - 17 min. This would make a great brunch item!!!

Rated 5 out of 5 by from This was awesome! This was awesome!! I used 1/2c whole wheat flour and 1c reg flour; I also used 1/2c sugar and 1/4c splenda. This is one of the best breads I have ever made. I cooked it at 325 (convection) for 50 min and it was perfect! It tasted like a brown sugar cinnamon apple bread...and the cranberries and the a great tang to it! It makes a nice, large loaf too. Make it, you won't be sorry!

And since i didn't have any cranberries i substituted strawberries for the cranberries and left out the nuts. I quartered the strawberries. I also used a little more than a cup of strawberries since i left out the nuts. I loved this bread so much! Try this version.

It is really good the first and second day...after that, it sort of dries out and isn't as tastey! I think Fresh cranberries is the way to go versus dried ones. I think this would be good for fall holidays as well

Rated 4 out of 5 by from I thought this recipie was great. I thought this recipie was great. I added 1/2 cup wheat flour in place of part of the white. I ran out of white sugar so i substituted half of the sugar with brown. Then Ii topped it with a little brown sugar and cinnamon to give it a crunchy top. Great! Maybe next time I would add more cinnamon to the batter.

Rated 5 out of 5 by from This recipe makes a delicious bread. This recipe makes a delicious bread. I substituted 1 egg for the cholesterol-free egg product and I increased the cinnamon to 1 1/2 tsp. My daughter has a nut allergy so we left out the nuts and it was still fantastic. Everyone loved it!
