Prepare cookie dough and shape into logs as directed. Freeze logs up to 3 days. When ready to bake, slice then bake as directed. No need to thaw first.
Cut each log of dough into 3 pieces; cut each piece in half, then cut each half into thirds. (You should have 18 slices.) Repeat with remaining log of dough.
Using a chef's knife and holding the tip end down on the cutting board, cut back and forth across the nuts until they are chopped to the desired size.
