Cranberry-White Chocolate Shortbread Recipe

What You Need

2

cups (4 sticks) butter, softened

1

cup sugar

4

cups flour

1-1/2

pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), chopped

1-1/2

cups dried cranberries

Make It

HEAT oven to 350°F. Beat butter and sugar in large bowl with mixer until light and fluffy. Add flour; mix well. Stir in chocolate and cranberries.

DROP rounded tablespoons of dough, 2 inches apart, onto baking sheets; flatten slightly.

BAKE 10 to 14 min. or until lightly browned. Cool 5 min. on baking sheets. Remove to wire racks; cool completely.

Storage Know-How

So tasty, especially if you like sweet with lots of butter! I baked in a convection oven at 325 degrees for 15 minutes, which was perfect for being lightly browned.

We make a very similar cookie at Christmas but use chopped marchino cherries in place of the dried cranberries.

I roll the dough into balls and place in the fridge to firm up. I bake each batch directly from the fridge...end up with cookie balls and then I roll each cookie in powdered sugar. These cookies are always a big hit and I have been baking them for years.

Cranberries and white chocolate are to sweet with the shortbread, for my tastes.

Cookies were fine but next time I make them I would use milk chocolate chips instead of the white. Using the white chips just made the cookies taste odd.

Awesome, melt in your mouth cookies. I usually end up using white chocolate chips and they turn out delicious every time!

OMG~ I made these for a cookie exchange and had to make another batch for myself... I could not stop eating them! I did however bake them for 15 min. DELISH!!!

These cookies are fantastic!!! While the ingredients are simple, the taste is beyond belief. I used white chocolate chips instead and for a finishing touch, I sprinkled a little sugar over each cookie before baking. Mix in the flour only one cup at a time and be careful not to over mix the batter.

This is a GREAT simple shortbread recipe. They are delicious, and so different! Great for parties b/c it makes a lot too!
