  • Cut each cucumber half into 5 pieces to serve.

Let the kids make cucumber "boats" instead! Just fill the cucumber shells with the cream cheese mixture as directed. Then, add snow peas for the sails. Decorate with other cut-up fresh vegetables as desired to resemble colorful sailboats.

Rated 5 out of 5 by from NOW TRY THIS AND DON'T CUT YOUR CUCUMBER. NOW TRY THIS AND DON'T CUT YOUR CUCUMBER. I USED A ZESTER FOR THE OUTSIDE TO GIVE A DIFFERENT LOOK. HOLLOW OUT THE INSIDE OF CUCUMBER THAN FILL WITH CREAM CHEESE FILLING. LET SET UP IN YOUR FREG FOR SEVERAL HRS OR TILL TIME FOR PARTY. I EVEN USED A HOT PEPPER NOT A LOT TO ADD A ZING TO THIS . EVERYONE LOVED IT. I THINK IF IT SETS TO LONG IT MIGHT GET SOGGY. GOOD LUCK AND ENJOY.

I add dill to the cream cheese for more flavor and sprinkle some on top for appearance. Also, I use paper towels to dry the cucumbers a bit before filling. It helps the cheese mixture to stick. I will keep making these!!

I got a good review from my co-workers they even asked for the recipe. Thank you for the suggestion of others to use the Veggie Cream Cheese if I did not use that it would not be a good result using a regular cream cheese.

They were kinda wobbily when put on a plate so be careful if bringing anywhere. Also, it was hard to put the cream cheese in them, but if you dab them with a paper towel it is much easier!

So when I entertain the girlfriends I always have a gluten-free appetizer. They left the crackers behind and EVERYONE ate these. Tasty, but I suspect they were also happy about the lower calories too.

I omitted the carrots and mixed in real bacon bits with the Philly Garden/Chive cream cheese, which helps with the blandness. After I filled the cucumbers, I sliced them and put on crackers for my husband. He loved them and asked for more.

I made this for New Years and it was a great contrast to the salty and fatty types of appetizers that are traditionally present but because the cucumbers are so wet I had a hard time getting the cream cheese to stay on.
