Size Wise

Sweets can be part of a balanced diet but remember to keep tabs on portions.

Mosaic Glazed Sugar Cookies

Heat oven to 375°F. Roll dough to 1/8-inch thickness on lightly floured surface. Cut into shapes with 3-inch cutters. Place on baking sheets sprayed with cooking spray. Bake 10 min. or until edges are lightly browned. Cool 3 min.; remove to wire racks. Cool completely. Beat 1 lb. powdered sugar, 1/3 cup milk and 2 Tbsp. corn syrup until blended. Spoon 3/4 of the icing into resealable plastic bag; seal bag. Spoon remaining icing into 2 resealable plastic bags; tint icing in one bag with 1/4 tsp. red food coloring, then tint remaining icing with 1/4 tsp. green food coloring. Snip small corner from bottom of each bag. Pipe plain icing onto cookies, then pipe red and green icings into stripes on cookies. Swirl with toothpick. Makes 42 servings, 1 cookie each.

Special Extra

Place cookie dough on parchment-covered baking sheets to prevent cookies from sticking to pans and to help keep baking sheets clean between batches.

Pinwheel Sugar Cookies

Melt 2 Tbsp. butter. Divide dough in half. Roll 1 half on lightly floured surface to 12x9-inch rectangle. Remove top sheet of paper. Brush dough with half the butter; sprinkle with 2 Tbsp. colored sugar. Starting at one short end, roll up dough tightly. Roll in 2 Tbsp. additional colored sugar. Wrap tightly in plastic wrap. Repeat with remaining dough. Refrigerate 1 hour. Heat oven to 375°F. Cut dough into 1/4-inch-thick slices; place, 2 inches apart, on baking sheets sprayed with cooking spray. Bake 9 to 11 min. or until lightly browned. Cool 3 min. on baking sheets; remove to wire racks. Cool completely. Makes 36 servings, 2 cookies each.

Rugelach Cream Cheese Cookies

Heat oven to 375ºF. Stir additional 1/4 cup flour into dough. Combine 3/4 cup finely chopped PLANTERS Walnuts, 3/4 cup golden raisins, 1/2 cup granulated sugar, 1/4 cup packed brown sugar and 1 tsp. ground cinnamon. Roll 1/4 of the cookie dough on lightly floured surface to 9-inch circle. Spread dough with 2 Tbsp. apricot jam or preserves. Sprinkle with 1/4 of the nut mixture; press firmly into dough. Cut dough into 16 wedges; roll up tightly, starting at wide end of each. Place, point-sides down, on baking sheet sprayed with cooking spray. Repeat with remaining dough. Beat egg and 1 Tbsp. water; brush onto dough. Sprinkle with combined 1/4 cup granulated sugar and 1 tsp. ground cinnamon. Bake 9 to 10 min. or until lightly browned. Immediately transfer cookies to wire racks; cool completely. Makes 64 servings, 1 cookie each.
