Since I love all the ingredients in this recipe, I thought it would turn out great----I was wrong. I bake/cook almost every day and am experienced in making bread puddings, but the ricotta never incorporated into the final product. It looked like scrambled egg whites throughout the bread pudding---even after taking the other reviewers advise and mixing very well. It tasted good, but was not creamy and looked very odd. Disappointed.
Very tasty! Be sure to beat the ricotta until creamy. I've made it twice, the first time I didn't beat the ricotta long enough and it had a definite "ricotta" texture. It was still wonderful, just not as creamy as the second time I made it.
