  • Melt 1 Tbsp. of the butter in large skillet on medium-high heat. Add chicken; cook 5 to 7 min. on each side or until cooked through (165ºF). Remove chicken from skillet to serving platter, reserving drippings in skillet; cover chicken to keep warm.
  • Add remaining 1 Tbsp. butter, the mushrooms and onions to skillet; cook and stir 5 min. or until onions are crisp-tender. Reduce heat to low.
  • Stir in sour cream and barbecue sauce until well blended; cook 2 min. or until heated through, stirring occasionally. Spoon over the chicken; sprinkle with parsley.

Serving Suggestion

Serve with a crisp mixed green salad and whole wheat roll.

    Excellent meal for my big family. It's good with or without the mushrooms and make sure to sear the chicken first.

    Creamy BBQ sauce has always been a favorite with us, even mixing mayonnaise with BBQ sauce for sandwiches. I used 4 large, about 2 lbs chicken breast halves, doubled the butter, used 1/2 cup BBQ sauce, doubled the sour cream and added 4 oz of cream cheese to the sauce at the end. We had enough for left overs and plenty of sauce to spoon over the mashed potatoes that went with it. We like large portions so this delicious dish worked well.
