Creamy Broccoli & Potato Soup

Broccoli and potatoes are simmered in broth until tender and then tossed in a blender to make this hearty, weeknight-quick soup.

What You Need

Tbsp.  oil
1
 onion, chopped
4
cups  small broccoli florets, chopped
1
 potato, peeled, chopped
3
cups  fat-free reduced-sodium chicken broth
1
cup  water
1/4
tsp.  black pepper
1
tub  (10 oz.) PHILADELPHIA Savory Garlic Cooking Creme

Make It

HEAT oil in large saucepan on medium heat. Add onions; cook 5 min. or until tender, stirring frequently.

ADD broccoli, potatoes, broth, water and pepper; stir. Bring to boil; simmer on medium-low heat 15 min. or until vegetables are tender.

ADD soup to blender in batches; blend until smooth. Return to pan. Whisk in cooking creme; cook and stir 2 to 3 min. or until heated through.

Blanch 6 additional small broccoli florets. Use to garnish individual servings of soup.
Variation
