  • Cook rice as directed on package, omitting salt.
  • Bring water to boil in large skillet; stir in bouillon until dissolved. Add vegetables; stir. Return to boil. Simmer on medium-low 5 min. or until asparagus is crisp-tender.
  • Add rice; cook 3 min., stirring occasionally. Stir in sour cream and mustard; cook and stir 2 min. or until heated through.

How to Shop for Fresh Asparagus

Examine tips of asparagus for signs of freshness. The tips should be closed and not too dry. A wrinkle in the stem or breaking down of the tip identifies old asparagus.

Substitute

Substitute 1 tsp. chicken bouillon for the bouillon cube.

Storing Asparagus

Stand fresh asparagus spears upright in a container filled with about 1 inch of water. Cover with a plastic bag and refrigerate.
