  • Cook cauliflower in boiling water in saucepan 10 min. or until tender; drain. Place in food processor.
  • Add reduced-fat cream cheese and dill; process until smooth.
  • Serve topped with Parmesan.

Make Ahead

Prepare as directed except do not top with Parmesan; place in microwavable serving dish. Refrigerate up to 24 hours. When ready to serve, uncover and microwave on HIGH 4 to 5 min. or until heated through, stirring every 2 min. Sprinkle with Parmesan.

My family and I like cauliflower, so we found this to be pretty good. However, it's just plain cauliflower so it's not very zesty. We sprinkled a bit of sharp cheddar on the top instead of parmasian and that seemes to liven it up a bit, and I found that if I add salt to the water I boil it in that helps as well. This dish really cleanses the pallet so I like to pair it with something with very strong flavor.

Rated 4 out of 5 by from Made the recipe, but with mix of frozen peas and cauliflower. Made the recipe, but with mix of frozen peas and cauliflower. Did not use processor, just zapped veggies until just tender. I heated chive and garlic philly cheese with some heavy cream. Added Salt and Pepper and dried blend of chili peppers...came out great, my guests loved it, none left. They wanted the recipe.

I never have liked that vegetable, but I tried this for my family and it was a HUGE hit! It was delicious and if you use a low fat cream cheese and parmesean, it still tastes amazing without being too bad for you. Thanks!

Rated 5 out of 5 by from this was a great alternative to potatoes! this was a great alternative to potatoes! I didn't get it as creamy as the photo, but it was good anyhow. Got rave reviews from the dinner party! I made this with the green beans and tomatoes Italian and the Easy Skillet Feta Chicken. It was a great meal, also the presentation was beautiful.

I mixed half a head of cauliflower in with my mashed potatoes...added butter and salt and pepper to the cream cheese and dill...this WILL make you like cauliflower even if you didn't before. Plus, kids don't even know it's there until they fall in love with it and you tell them!

My 8 year old won't touch caulifower and he actually asks for this recipe. I used a hand mixer and it probably wasn't the right texture but, it was still incredible!

Rated 5 out of 5 by from It was great! It was great!! Even those who hate cauliflower enjoyed it. My niece and nephew were intrigued with the recipe and actually tried it. They liked it so well that they copied the recipe to try at home because it did NOT "taste" like cauliflower.
