This creamy, cheesy chicken breast and pasta dish is even better with tomato and bacon. (Bonus: It only takes 20 minutes to make, start to finish.)

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook chicken in large skillet on medium heat 5 to 6 min. or until done, stirring occasionally. Add next 5 ingredients; mix well. Cook 3 min. or until Neufchatel is completely melted and mixture is well blended, stirring frequently.
  • Drain pasta; place in large bowl. Add sauce; mix lightly. Sprinkle with Parmesan.

Food Facts

Some cooks prefer to drain the pasta well to prevent excess water from diluting the sauce, while others like a little moisture to help prevent pasta from sticking together. In any case, reserve a few tablespoons of cooking water to add to pasta if it starts to stick together or if you want to dilute the sauce.

This was a hit in my household. I would recommend more sauce and more cheese. It was a little dry and if you are having leftovers it is a lot dry.

I made some modification to this recipes. I added a half of cup of bella mushrooms and white onions. I made sure to season to the chicken breast and I used red pepper as my choice of pepper to season the sauce.

Definitely a keeper! A touch of sweetness with the dark taste of bacon. Delicious. The down side is that when left over too much sauce is absorbed by the pasta, but still good. Makes me want to make it fresh again!
