  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook chicken in large skillet on medium heat 5 to 6 min. or until done, stirring occasionally. Add all remaining ingredients except Parmesan; mix well. Cook 3 min. or until Neufchatel is completely melted and chicken mixture is heated through, stirring frequently.
  • Drain pasta; place in large bowl. Add chicken mixture; mix lightly. Sprinkle with Parmesan.

I made this last night, doubled the recipe because I have 3 kids and a husband who likes the leftovers for lunch. I cooked the chicken in a garlic & herb seasoning and a little olive oil to give it more flavor. Not one person complained (which is rare) about eating it, and it was definitely less bland than many of the other recipes I have tried. I used the oscar meyer bacon crumbles (easy and just as yummy), but doubling the water was just a bit too much. I have a feeling that it will make the leftovers better though, so it works out. Everyone liked this one, and I liked it even more than they did.

Rated 4 out of 5 by from My son and husband both liked it a lot. My son and husband both liked it a lot. My husband went for seconds, which is always an indicator of success. I lessened the amount of chicken a bit, and because I didn't have Italian-style diced tomatoes, I added oregano in with the chicken as it cooked, and it still turned out very well. I do think it's a little high in fat and calories, but next time I'll try adding more vegetables to the mix: green peppers, onion, some zucchini perhaps; that will lessen the fat and calories per serving, and stretch the meal farther. All in all, a great meal, with lots of variation potential!

I used the whole 8 oz and that still didn't quite seem like enough...we would have liked it more if it was a bit creamier. I used more bacon since my boyfriend complains about never having enough in these recipes. It was just kind of bland for our taste too...the only real taste came from the bacon. I would definitely use more spices, maybe some garlic salt or Italian seasoning next time I try this recipe. Not 100% in love with it, but I'll give it one more try with a few of my own ideas added.

Rated 3 out of 5 by from I will use this recipes again. I will use this recipes again. But it is base for a pasta bake. I added extra cream cheese like noted in others review. And it was just ok. I took the left overs and added 1/4 package of cream cheese to an 8 oz can of italian seasoned tomato sauce and 1 cup of Italian shredded cheese. Then when heated topped with cheese and more bacon crumbles and finished cooking till melted. Boyfriend said this is the way it should have been made the first time. I did add mushrooms and extra seasoning when cooking the chicken the first time.

Rated 4 out of 5 by from Wonderful flavor with a little "tweaking." I browned the chicken in 1-2 Tbsp. Wonderful flavor with a little "tweaking." I browned the chicken in 1-2 Tbsp. Italian salad dressing and sprinkled with garlic salt, garlic powder, paprika and pepper during cooking. After removing chicken from skillet, I sauteed 8 oz. fresh sliced mushrooms in 1 Tbsp. butter with salt and pepper. I skipped the water and substituted about 18 oz. crushed tomatoes for the diced tomatoes. I also threw in a handful of black pitted olives for extra flavor and a handful of fresh baby spinach for color. It was fabulous!

Rated 5 out of 5 by from My family gave this a 5 thumbs up! My family gave this a 5 thumbs up! I used 2 cans of diced tomatoes and blended 1.5 cans in the blender. I also added garlic powder, garlic salt and Italian seasoning. I used 8oz Neufchatel cheese and left out the water. I kept my new "fancy sauce" separate from the pasta so each person could have as little or as much sauce as they wanted. Perfect amount for my family of 5. I barely have enough left for a small lunch tomorrow.

Rated 5 out of 5 by from Oh Wow! Oh Wow!! What a GREAT recipe that you can add stuff to to make it super delicious. I made this today and between three of us, plates were licked and leftovers started fights. I used chicken broth instead of water, doubled the cream cheese and omitted the bacon. SUPER EASY and fast. 20 minutes tops. Parmesan sprinkled on top after really was the icing on the cake. I used shells instead of bow-ties, holds sauce better.

I could not find that particular pasta but used rotini since that's what I had. I love tomatoes so I added another can of them and I used pasta water in place of the plain water. The pasta absorbed it as it sat so mine was not runny or thin as other reviewers stated. I hardly noticed the bacon so I would probably leave it out next time (or add more!)
