What You Need

RITZ Reduced Fat Crackers, finely crushed (about 2 Tbsp.)

Tbsp. KRAFT Grated Parmesan Cheese, divided

small boneless skinless chicken breasts (1/2 lb.)

can (14 oz.) fat-free reduced-sodium chicken broth, divided

cup orzo pasta, uncooked

tsp. oil

oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed

cup frozen mixed vegetables (corn, carrots, peas and green beans), thawed

Make It

MIX cracker crumbs and 1 Tbsp. Parmesan on small plate. Rinse chicken with cold water; dip in crumb mixture, turning to evenly coat both sides of each breast. Press crumbs gently into chicken to secure.

BRING 1 cup broth and water to boil in medium saucepan on medium-high heat. Add orzo; simmer on medium-low heat 9 min. or until most of liquid is absorbed and orzo is tender. Meanwhile, heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 to 6 min. on each side or until done (165ºF). Remove chicken from skillet, reserving drippings in skillet; cover chicken to keep warm.

ADD Neufchatel and remaining broth to drippings in skillet. Bring just to boil on medium heat, stirring constantly. Simmer 3 min. or until sauce is thickened, stirring frequently. Meanwhile, add vegetables to orzo mixture; simmer 2 min. or until heated through, stirring frequently.

SPOON orzo mixture onto 2 serving plates; top with chicken. Stir remaining Parmesan into Neufchatel sauce; spoon over chicken.

this recipe was delicious, although as mentioned by others, did need a lot of babysitting. the sauce was great and my chicken came out nice and crunchy!

This recipe was absolutely delicious. Not only was it extremely easy to make,it was quite tasty as well. I did add some cayenne pepper to the cracker mixture for the chicken, as well as cayenne pepper, garlic powder and black pepper to the cream cheese sauce. I also ended up adding some corn starch mixed with a little water to the cream sauce to thicken it up. I definitely would recommend making this and I sure will be making it again as well - I think I may try grilling the chicken next time though instead of doing to cracker crumb breading to kick up the health factor a bit.

The chicken turned out crispy and the serving suggestion was great. Will definitely make again, though next time I may substitute the cream of celery soup for cream of chicken. The celery flavor was a bit much.

This was delicious and pretty easy to make, although it involves a lot of babysitting. I added some garlic powder, pepper and Italian seasoning to the parmesan sauce while it was cooking, just to add a touch more flavor. The overall result was good, but I felt the sauce was too runny. And this was a very generous serving.

My hubby put this on his "favorites" list. It was good. I couldn't quite get the sauce smooth. I think I added the broth too soon. Otherwise a great dish!

You can use any pasta and it is good.

What a yummy dish! Was super easy to make and I doubled the recipe for my family of 5. My husband said to make it again! I didn't have crackers so I used the italian style bread crumbs and it turned out great! The sauce makes the dish for sure and I put some pepper in it for extra flavor.
