  • Mix cracker crumbs and 1 Tbsp. Parmesan on small plate. Rinse chicken with cold water; dip in crumb mixture, turning to evenly coat both sides of each breast. Press crumbs gently into chicken to secure.
  • Bring 1 cup broth and water to boil in medium saucepan on medium-high heat. Add orzo; simmer on medium-low heat 9 min. or until most of liquid is absorbed and orzo is tender. Meanwhile, heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 to 6 min. on each side or until done (165ºF). Remove chicken from skillet, reserving drippings in skillet; cover chicken to keep warm.
  • Add Neufchatel and remaining broth to drippings in skillet. Bring just to boil on medium heat, stirring constantly. Simmer 3 min. or until sauce is thickened, stirring frequently. Meanwhile, add vegetables to orzo mixture; simmer 2 min. or until heated through, stirring frequently.
  • Spoon orzo mixture onto 2 serving plates; top with chicken. Stir remaining Parmesan into Neufchatel sauce; spoon over chicken.

Rated 5 out of 5 by from This recipe was absolutely delicious. This recipe was absolutely delicious. Not only was it extremely easy to make,it was quite tasty as well. I did add some cayenne pepper to the cracker mixture for the chicken, as well as cayenne pepper, garlic powder and black pepper to the cream cheese sauce. I also ended up adding some corn starch mixed with a little water to the cream sauce to thicken it up. I definitely would recommend making this and I sure will be making it again as well - I think I may try grilling the chicken next time though instead of doing to cracker crumb breading to kick up the health factor a bit.

Says it serves two, but my mother and I both had enough left over to make another meal out of it. I breaded the chicken in italian bread crumbs instead of Ritz and also added a little cajun seasoning to the breading mixture to spice up the chicken. Will definitely make again :)

I added some garlic powder, pepper and Italian seasoning to the parmesan sauce while it was cooking, just to add a touch more flavor. The overall result was good, but I felt the sauce was too runny. And this was a very generous serving.

It has everything you need for a complete meal and with low calories. The sauce is a bit thin but thickens when it starts to cool. Very tasty meal for two with no leftovers to tempt you to overeat. It is going to be a part of our normal menu.Bravo!

I didn't have crackers so I used the italian style bread crumbs and it turned out great! The sauce makes the dish for sure and I put some pepper in it for extra flavor.

Rated 5 out of 5 by from This is so good! This is so good! The sauce is very creamy, and even if it's not quite smooth. I substituted the Ritz mix for Italian breadcrumbs the second time I made this, and it tastes just as good. I make this all the time and we absolutely love it.

Will definitely make again, though next time I may substitute the cream of celery soup for cream of chicken. The celery flavor was a bit much.
