  • Heat oven to 375ºF.
  • Cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 3 min.
  • Meanwhile, cook chicken in large skillet sprayed with cooking spray on medium heat 5 min., stirring frequently. Stir in broth; simmer 3 min. or until chicken is done. Add Neufchatel; cook and stir on low heat 1 min. or until melted. Remove from heat. Stir in 1/2 cup mozzarella.
  • Drain pasta mixture. Add to chicken mixture; mix lightly. Spoon into 8-inch square baking dish; cover.
  • Bake 15 min. or until heated through. Sprinkle with remaining cheeses; bake, uncovered, 3 min. or until mozzarella is melted.

How to Safely Handle Raw Chicken

Always wash hands, preparation surfaces and utensils in hot, soapy water before and after contact with raw chicken. Dry hands and surfaces with a clean towel or paper towels. Take special care in washing worn cutting boards as there may be hard-to-clean grooves or cracks that can collect bacteria.

Special Extra

Add 1/2 tsp. dried basil leaves to cooked chicken in skillet along with the Neufchatel cheese.

Substitute

Bake in 2-qt. casserole instead of the square baking dish.

Before cooking the chicken, I added a bunch of seasonings to it (garlic salt, pepper, onion flakes, chicken seasoning), so the chicken was flavorful in the pasta. Also for the sauce, 2oz of the cream cheese is NOT enough, even after adding chicken broth. Instead, I used the whole package of cream cheese, and just eyeballed the amount of chicken broth, pretty much until it reached the desired consistency. I also added some oregano. It didn't dry out in the oven :) Hope this helps

I used a pound of pasta and over a pound of chicken, so I doubled up all the ingredients in the recipe. Even with doing that and seasoning the chicken while cooking and adding additional cheese at the end, the dish still didn't have much taste. It was OK, but needs more flavor. I may not make this dish again.

This recipe has quickly become a household favourite, but we did make a few modifications. We use Montreal Chicken seasoning to cook the chicken, along with a little garlic, etc. Spice it how you like it, as it is a bit bland without the seasoning. I also increased the amount of cheese used, but I just don't believe most recipes call for enough cheese! The texture on this is delightful, even if using frozen broccoli.

I will say up-front that I used full-fat versions of everything (gee, I wonder why it tasted so good?). Also, instead of baking it I threw it all in my crock pot and kept it on warm for the party! I would absolutely make it again, and I'd work to lighten it, but I would definitely be cautious using all light and fat-free products in this.

I seasoned the chicken with herbs while cooking to give it more flavor, which was nice. But I really didn't care for the sauce at all! The cream cheese gave it such a sour flavor, and reminded me of stroganoff -- which I'm not a fan of at all! I won't make this particular recipe again. I'd have to find a way to do a creamy sauce that's low fat like this one.

I had to give this recipe only 2 stars because I found even after adding some spices that the sauce was way to dry!!! I doubled the broth, cream cheese and even added a little milk. The spices I added were garlic salt and Mrs. Dash's Table blend and I added them to the chicken. My kids loved this recipe so I will make it again but to my taste!!!!!

Rated 5 out of 5 by from Love this and make it quite often. Love this and make it quite often. I double the sauce and occasionally use precooked chicken strips cut up. I also chop up fresh spinach (or use frozen) and add it to the sauce. Also add some oregano, basil and parsley as well. Picky 8-year-old twins don't even know they're getting double veggies since I added the spinach (chopped pretty small).

A few reviewers mentioned it being a little bland for their liking but I thought it was perfect (personal prefernce of course). Instead of cooking the chicken myself I used frozen grilled chicken strips to save time so the overall prep time was very minimal. This was a quick & easy meal that the whole faimly enjoyed!
