This great to make ahead and freeze before you bake it for a quick weeknight meal. I too doubled the ***** cheese and used about 1/2 cup parmesean instead of just two tablespoons. I also found that you need about 2 cups of pasta. Mix it all together instead makeing two steps out of baking it.
Reviewed earlier and said my husband thought too dry. Took acook's suggestion and added a can of green enchilada sauce. Much more moist and more flavorful.
I always double the sauce and add garlic and onion powders for flavor. Delicious!
