  • Prepare stuffing mix as directed on package. Meanwhile, heat large nonstick skillet on medium-high heat. Add chicken; cover. Cook 5 to 7 min. on each side or until done (165ºF). Remove chicken from skillet.
  • Add vegetables, soup and water to skillet; cover. Cook 6 min. or until heated through, stirring often.
  • Return chicken to skillet. Cook 1 min. or until hot. Serve with stuffing.

Substitute

Use any frozen vegetables you have on hand, such as broccoli, green beans or carrots, instead of the frozen mixed vegetables.

Rated 4 out of 5 by from Good for a quick weeknight meal. Good for a quick weeknight meal. I pan seared the chicken and seasoned it with garlic powder, salt, pepper and crushed red pepper. I plated the stuffing, then chicken, then "gravy" then topped with shredded cheddar cheese. Very good. I also seasoned the soup and veggies with the same seasonings as the chicken.

It was good, but I think could use a little spicing up - maybe some garlic or onions thrown in. I also really appreciate that it's pretty healthy. I'm sure I'll be making this one again. This is a speedy dinner perfect if you're on the run or are too tired to cook something terribly elaborate. Instead of the plain cream of broccoli soup, I use reduced fat broccoli cheese soup. It adds a little extra kick that has my family asking for seconds!
