  • Sprinkle chicken with 1 tsp. of the seasoning mix. Heat oil in large skillet on medium-high heat. Add chicken; cook 5 min. on each side or until cooked through. Remove chicken from skillet; cover to keep warm. Add remaining seasoning mix and water to skillet; stir until well blended. Bring to boil, stirring occasionally.
  • Stir in rice; cover. Reduce heat to low; cook 5 min.
  • Add sour cream; mix well. Top with chicken; sprinkle with cheese. Cover and cook an additional 1 to 2 min. or until cheese is melted.

Substitute

Prepare as directed, using BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream and KRAFT 2% Milk Shredded Reduced Fat Cheddar Cheese.

Keeping it Safe

When cooking boneless chicken breasts, use a visual test to ensure the meat is thoroughly cooked. Cut a small slit in the thickest part of the chicken piece. If the meat is totally white with no pink color, it is safe to eat.

I didn't have Minute Rice, I had the long cooking type, but I was still able to make this dish. I just boiled the rice in the water/spice mixture for 20 minutes or so. Some rice was still crunchy, but the taste was wonderful. I plan to make this again. In fact, I bought the Minute Rice so I can make it again in the future.
