what you need

cup  boiling water
pkg.  (4-serving size) JELL-O Lemon Flavor Sugar Free Gelatin
cup  cold water
cup  thawed COOL WHIP Whipped Topping
cup  fresh grapefruit sections, halved
cup  fresh orange sections, halved

Make It

STIR boiling water into dry gelatin mix at least 2 minutes until completely dissolved. Add cold water. Remove 3/4 cup of the gelatin; place in medium bowl. Set aside. Refrigerate remaining gelatin until slightly thickened. Add whipped topping; stir with wire whisk until well blended. Gently stir in fruit. Pour into serving bowl. Refrigerate until set but not firm.

PLACE medium bowl of measured gelatin in larger bowl of ice water; stir until slightly thickened. Beat with electric mixer on high speed until almost doubled in volume. Spoon over gelatin layer in serving bowl. Refrigerate 4 hours or until firm.

GARNISH with additional fruit and fresh mint leaves, if desired.

How to Peel and Section Oranges or Grapefruit:
Peel away orange or grapefruit skin. Cut down against either side of membrane "dividers" with paring knife and lift out sections. Do this over a bowl to catch the juice.
How to Section Citrus Fruit
Use a sharp paring knife to section fresh oranges or grapefruit. Cut a 1/2-inch-thick slice off both the top and bottom ends of the fruit. Cut the peel and white pith away from the fruit, using a downward cutting motion following the shape of the fruit. Place the peeled fruit piece on its side, then cut down along the membrane on both sides of each section to remove the fruit.
