It is especially great with fresh pineapple cubes or starwberries. My only issue is that it makes a large amount so for a smaller party I would recommend cutting the recipe in half. I made it for my 2 yr olds birthday party and what I had put out in a pineapple "bowl" was devoured. It was very very hard to stay out of the remaining dip the next couple of days. I used light cream cheese and light cool whip.

Rated 5 out of 5 by from Looked for a "different" recipe for niece's bridal shower. Looked for a "different" recipe for niece's bridal shower. Selected this recipe because no negative reviews. This recipe is fabulous. Such a hit that we made it for her wedding, made two batches, none leftover. Had guests say they don't like coconut and would never eat it. They were quite surprised when they found out it contained coconut. Now we are making for her sister's bridal shower and wedding!

Rated 5 out of 5 by from WOW what a great dip. WOW what a great dip. I took some to a church function and a hand full of people asked how it was made and what was in it. The guys at my husbands work loved it too. I will definently make it again it makes a lot and every one loves I think even some of the coconut haters liked it. It can almost be used and a topping for angel food cake. Love it Love it Love it.

Rated 3 out of 5 by from this was very good, light, and fluffy. this was very good, light, and fluffy. I would have liked more coconut flavor though. I think the Cool Whip really diluted the flavor because it's so sweet and has such a distinct flavor on it's own. Maybe changing it to whipped cream instead of cool whip might help the coconut flavor stand out more.

I took the leftover (and untouched) dip and put it into a graham cracker crust and topped it with Strawberry Cool Whip-it was really good. I am thinking there may be another way to top it that would be a bit more flavorful next time--this was just so easy and quick.

It went well with every fruit we had, but especially the pineapple, strawberry, kiwi, and orange. Even those not to crazy about coconut where able to enjoy it as well. Definetly use for your next party or shower.

It was so good there was none left to take home with me so I made more today just for my family! I plan to put some in our brown bag lunches! GREAT RECIPE!

It's important to use softened cream cheese (I mixed it in my Magic Bullet), and next time I will add some toasted coconut to make it a little "prettier" and add extra coconut flavor
