  • Cook onions and half the red peppers in butter in large saucepan on medium heat 5 to 6 min. or until crisp-tender, stirring frequently.
  • Add cream cheese; cook on low heat 3 to 4 min. or until melted, stirring constantly. Stir in turkey, corn, broth and milk.
  • Cook 5 min. or until soup is heated through, stirring occasionally. Serve topped with remaining red peppers and black pepper.

Substitute

Prepare using PHILADELPHIA Neufchatel Cheese.

Special Extra

For more robust flavor, roast and peel the red peppers before chopping. Add to soup along with the turkey. Or, use drained, jarred roasted red peppers instead.

Make Ahead

This delicious soup can be made ahead of time. Cool, then refrigerate up to 2 days. Reheat before serving.

Note

This is a great way to use leftover cooked turkey.

I always use my leftover turkey to make this soup and then freeze it to eat a little later in the winter (when everyone isn't so burned out on turkey). I took some of the other mentioned additions. I added a splash of white wine to the onions and red pepper along with about 1/8 tsp of red pepper flakes for a little heat. I had enough turkey to make a recipe and a half, but then accidentally added the entire block of cream cheese (I should have only used 3/4 of the block). After adding a 1.5 of broth and 3/4 cup of milk, I surprisingly had achieved the thick texture of the photo. My last addition was to add some roasted peppers because I had them on hand (and needed another half a pepper to make my recipe and a half). Delicious! This recipe never lets me down!

I added potatoes instead of turkey and it was still good. I will try it with turkey the next time I make it but it also works as a great vegetable chowder. I did have little flecks of the cream cheese throughout the soup, I might not have let it melt enough before adding everything else.

Rated 4 out of 5 by from I made the soup just as it is stated. I made the soup just as it is stated. As noted by others, it was more thin than the photo would lead you to think. My fix, I added one half cup of instant rice at the end. Cooked a few more minutes to allow it to absorb some of the liquid and it was perfect. Salt and pepper to taste and garnished with fresh parsley. Everyone loved it.

Then I lost it and have been looking for the recipe ever since (I searched 'chowder' instead of soup). I make it with a splash of wine added to the onions/peppers - it is delicious!

I do not use the red peppers (don't like them). I add carrots and a little Thai red chili spice. I also add herbs for more flavor.
