  • Heat dressing in large skillet on medium-high heat. Add vegetables; cook and stir 8 to 10 min. or until crisp-tender. Remove from heat.
  • Stir in cheese and sour cream; cook on medium heat 3 to 5 min. or until cheese is melted and vegetable mixture is heated through, stirring frequently.
  • Top with bacon and cilantro.

Variation

Prepare using KRAFT Lite Zesty Italian Dressing, and BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream.

Special Extra

Drizzle with a squeeze of fresh lime juice before serving.

I made the recipe as printed but would make some changes should I make it again in the future. The flavor was overall good; however, the sour cream and cheese totally over-powered the delicious farmer's market veggies. Next time I would either double the veggies (or at least the zucchini) or half the sour cream and cheese.

Im not so handy with corn cobs so I actually used frozen corn and because no one should be limited to just a few pieces of bacon, I incorporated bacon! It was absolutely delicious! I actually ran out of recipe cards. Its light and refreshing.. I know this is strange, but its also fun to eat

Rated 5 out of 5 by from I loved this recipe. I loved this recipe. Easy to prepare. The cheese with a touch of Philadelphia Cream Cheese makes it so creamy. It is one of those recipes that is even better the next day. Don't chop your zuchinni too large.

I wasn't sure what size zucchini to use plus to use table onions or yellow onions. I had yellow on hand so I used that & added to a medium size zucchini. I ended up using dried bacon since I didn't have uncooked on hand. Family loved it.

I made a lightened up version of this recipe using reduced fat sour cream, the light Zesty italian dressing and 2% Mexican cheese blend. I omitted the bacon, but added a chopped Hatch chile pepper. The flavor was great and I could enjoy it without guilt.

Rated 5 out of 5 by from Very tasty dish. Very tasty dish. Only thing, I bought the wrong cheese last night. Bought the creamy Mozzarella instead of the Mexican blend. So I used it and added a little cheddar as well, plus added a bit of salt and pepper. Came out great. When I make it again I will omit the cilantro as my friends don't really like it and will sub with green onions. This will accompany my grilled burger tonight. Thanks Kraft

Rated 5 out of 5 by from Absolutely terrific! Absolutely terrific! I wish I would have doubled the recipe. I used red onions but something more mild would probably work better. This is one recipe I'm adding to my "Dinner Guest" portfolio.
