Save 50 calories and 6g of fat per serving by preparing with KRAFT Lite Zesty Italian Dressing, BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream, and 1 pkg. (7 oz.) KRAFT 2% Milk Reduced Fat Monterey Jack Cheese.
Substitute chayotes for the zucchini. For softer chayotes, increase cooking time to 20 min. or until of desired doneness, adding a little water if necessary.
Recipe can be assembled ahead of time. Refrigerate up to 4 hours before baking as directed.

I was looking for a zucchini recipe that was a little different. Didn't add all the chipotle, and used creamed corn as I didn't have frozen corn. We liked the flavors and this had a nice zip without too much heat.
I made this for our Girls Night and it was a hit! Keep in mind they NEVER like anything I bring and when I found myself with less than 30 min to make a meal I picked this. They CLEANED THE BOWL and ALL asked for the recipe...YAY!!! Finally I made something they not only liked but LOVED and it was SO easy and SOOOOO good! Thank you!
