Creamy Eggnog Cheesecake

During the busy holiday season, serve this easy, no-bake cheesecake. Flavored with eggnog and a touch of nutmeg, it’s festive and delicious.

What You Need

cup HONEY MAID Graham Cracker Crumbs

1/2

cup sugar, divided

1/4

cup (1/2 stick) butter or margarine, melted

1/4

tsp. ground nutmeg

env. KNOX Unflavored Gelatine

1/4

cup cold water

pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

cup eggnog

cup cold whipping cream, whipped

Make It

MIX cracker crumbs, 1/4 cup of the sugar, the butter and nutmeg; press firmly onto bottom of 9-inch springform pan.

SPRINKLE gelatine over water in small saucepan; let stand 1 minute. Cook on low heat 3 minutes or until gelatine is completely dissolved; stirring occasionally. Beat cream cheese and remaining 1/4 cup sugar in large bowl with electric mixer on medium speed until well blended. Gradually add gelatine, then eggnog, beating well after each addition. Refrigerate until slightly thickened. Gently stir in whipped cream. Pour over crust.

REFRIGERATE 4 hours or until firm. Run knife or metal spatula around rim of pan to loosen cake; remove rim. Cut cheesecake into 8 slices to serve. Store leftover cheesecake in refrigerator.

I made this cheesecake and it was a big hit, everyone loved it. It will set properly if you whip the whipping cream correctly. In order to do that, you need to beat the whiiping cream with an electric mixer for a few minutes until soft peak forms, preferably, in a chilled metal bowl. I hope this helps. This is an amazing recipe.

I was wanting to try a different type of cheesecake and this seemed like it would be good for the christmas holidays. I was very disappointed though. After trying to make this twice it never set. I think maybe there should have been more cream cheese. I have never made a cheesecake before that uses only 1 pkg. This receipe ended up in the trashcan.

As a lover of Egg Nog I was very dissappointed in this cheesecake. It wasn't very flavorful and it never set even though I followed the diretions to a T. I won't be making this again. It's not worth the 400 calories and 30 grams of fat!!!! I'd rather just drink Egg Nog!!!
