  • Add boiling water to gelatin mix in large bowl; stir 3 min. until completely dissolved. Stir in pineapple. Refrigerate 1-1/4 hours or until slightly thickened.
  • Mix cream cheese and cottage cheese in medium bowl until blended. Gently stir in COOL WHIP with whisk. Gradually add to gelatin, mixing well after each addition. Stir in nuts and cherries. Pour into 6-cup mold sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold before serving.

Serving Suggestion

This fruity side salad, which is sure to brighten up any plate, makes a great accompaniment to cooked lean meat, poultry or fish and fresh vegetables.

How to Unmold the Gelatin Mold

Dip mold in warm water for about 15 sec. Gently pull gelatin from around edges with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.

Special Extra

Serve this refreshing molded salad on a bed of lettuce leaves.

Rated 4 out of 5 by from Years ago, a friend gave me a modification of this recipe. Years ago, a friend gave me a modification of this recipe. Mainly when I now make it, I use diet lime Jello, lowfat mayo, low fat cottage cheese, crushed canned pineapple, and the secret ingredient is 1/2 tsp. of prepared or creamy horseradish. If I have walnuts, I add a few on the top so that people that do not want nuts can easily avoid them. The next time you make the Kraft recipe, set aside a cup full or so to experiment with and add a smidgen of horseradish. This will make a salad type salad, not a desert type salad. It is awesome. I'll bet that most people will like it but will be unable to figure out the secret ingredient. I skip the cherries to be more economical. One or two would be nice for a decoration to make it more colorful.

The tip was a little DA!, most anyone would know to subtitute 2 small pkg for 1 large pkg. DA!again! Yes I would make this recipe with any flavor of Jell-O, I usally make most of my Jell-O recipes with the Sugar Free Jell-O.

For as far back as I can remember we always had this salad at Thanksgiving and Christmas dinners. It tastes good and you can use fat free cream cheese and cottage cheese and sugar free jello and sugar free whipped topping to cut the sugar/calories. Yum!

Rated 5 out of 5 by from This was easy and one of our new favorites. This was easy and one of our new favorites. I used a 8oz tub of cool whip instead of whipping cream. I subbed pecans in place of walnuts. I did not use the cherries as I didn't have any on hand. I may try adding mini marshmallows next time.
