  • Cook pasta as directed on package. Meanwhile, heat oil in large skillet. Add mushrooms, onion and garlic; cook and stir until tender.
  • Bring half-and-half just to a boil in nonstick saucepan on medium heat. Reduce heat to low; simmer 5 minutes. Add Gorgonzola cheese, Parmesan cheese and sherry; cook until sauce is thickened, stirring frequently.
  • Drain pasta; place in large bowl. Add cheese sauce; toss to coat. Top with mushroom mixture.

I also substituted bleu cheese for gorgonzola. It was fantastic and next time I think I might even cut the amount of onions in half since it kind of overpowered the cheese. Great recipe and so quick!

Was pretty good, I used garlic and herb cream cheese instead of half and half for added flavor. Had to add alittle milk to thin it out some. Pesto is also a good add in. I've made this a couple of times now, will make again.

Rated 5 out of 5 by from I loved this dish! I loved this dish! I omitted the mushrooms (not a fan), caramelized the onions, and included the toasted walnuts. It was so good. Next time I think I'll use red onions instead of white. Will definitely make this again.

I ended up adding more cheese to aid the thickening of the sauce. All in all, this is an incredibly good recipe, and it's pretty cheap, too.

Rated 4 out of 5 by from Don't use the full 2 cups of half and half. Don't use the full 2 cups of half and half. I only used 1 1/4 cups and it turned out great. I also added bacon to the mushroom/onion mixture. Great addition if you are looking for a little more flavor.
