Rated 3 out of 5 by from This recipe calls for way too much lemon! This recipe calls for way too much lemon! Do yourself a favor and do not use the juice and peel of one whole lemon! It will be more delicious and not as overpowering if you add less lemon juice(how much is up to you by taste). I think the next time I make this, I will use about a third of the juice this recipe calls for. Rated 5 out of 5 by from This is an exceptionally easy dish to make that tastes delicious! This is an exceptionally easy dish to make that tastes delicious! I made it for lunch in just a few minutes. I substituted lime for the lemon (didn't have any lemons in the house) which complimented the asparagus nicely. I also used brown minute rice for more nutritional punch. This will be a favorite recipe for inclusion in my menus every week while asparagus is in season!

Rated 5 out of 5 by from I have been making this recipe for over a year now. I have been making this recipe for over a year now. I use zest and juice from a whole lemon and about a pound of aparagus. The flavors are strong but that's just the way we like it! Add the lemon juice before putting in the cream cheese to distribute the flavor more evenly. I always nuke the cream cheese for 10-15 seconds before adding it so that I don't get any lumps.

My finicky 17 year old was not particularly pleased with the combination but finally admitted he kinda liked it and it was a great way to add some asparagus to a recipe. I did not have minute rice so I used Italian Risotto that I had in the cabinet. Cooking Risotto takes some time so I added the asparagus near the end but at least 10 mins to cook.

Used brown rice instead of white and garlic instead of onion (used 2 cloves, will use more next time!). Used double the amount of asparagus and extra fresh lemon juice! If using brown rice, you'll need to cook longer for the rice to be soft! Also, added black pepper.

Rated 2 out of 5 by from Made this the other night. Made this the other night. The flavor of the asparagus overpowered everything else and really killed the dish. My Husband was nice and said it was okay. I even tried adding Parmesan cheese as suggested but it didn't help. I will not make it again. I gave it a 2 due to easy and quick preparation.

It was a neat idea but the cream cheese and the lemon juice just didn't taste right together. It ended up in the garbage.

My family loves rice, and it's nice to find a new recipe. We loved the creamy lemon flavor. The kids weren't hot about the asparagus though.
