We have made soooo many of these recipes, and 99% of them are fantastic! This one...not so much. I basically made carrot soup :/
Definitely not a substitute for mashed potatoes, but pretty tasty in its own right. It has a savory-slightly-sweet flavor to it. A good way to use up some extra carrots.
