Creamy Mashed Carrots recipe

I used canned carrots and heated them in the broth and followed the rest of the recipe. Very good and very fast. Loved it

8 servings, about 1/2 cup each

What You Need

lb.  carrots, peeled, thinly sliced
can  (14 oz.) fat-free reduced-sodium chicken broth
cup  (1/2 of 8-oz. tub) PHILADELPHIA Chive & Onion Cream Cheese Spread

Make It

BRING carrots and broth to boil in saucepan on high heat; cover. Simmer on medium-low heat 30 min. or until carrots are very tender and most of the broth is absorbed, uncovering for the last 5 min.

REMOVE from heat; mash until smooth.

ADD cream cheese spread; stir until melted.

Sprinkle with chopped fresh chives just before serving.
Make Ahead
Recipe can be prepared ahead of time. Cool, then refrigerate up to 24 hours. Reheat just before serving.
