Creamy Mocha Berry Parfait

This luscious dessert combines fresh fruit with a quick to prepare topping that tastes like a creamy spoonful of cheesecake. Truly the best of both worlds.

What You Need

Tbsp. PHILADELPHIA Cream Cheese, softened

tsp. sugar

1/4

tsp. brandy extract

tsp. MAXWELL HOUSE Instant Coffee, dissolved in 1 Tbsp. warm water

1/3

cup thawed COOL WHIP Whipped Topping

oz. BAKER'S Semi-Sweet Chocolate, finely grated, divided

cup mixed fresh berries (such as strawberries, raspberries)

Make It

MIX cream cheese, sugar, brandy extract and dissolved coffee in small bowl with wire whisk until well blended. Gently stir in whipped topping and half of the chocolate.

PLACE 1/2 cup berries in each of 2 parfait glasses or dessert dishes. Top evenly with cream cheese mixture; sprinkle with remaining chocolate. Serve immediately or refrigerate until ready to serve.

How to Thaw COOL WHIP

Place unopened 8-oz. tub of whipped topping in the refrigerator for 4 hours. Do not thaw in the microwave.

Substitute

Prepare as directed, using PHILADELPHIA Neufchatel Cheese and COOL WHIP LITE Whipped Topping.

How to Grate Chocolate

Use a box grater to grate an unwrapped square of room-temperature BAKER'S Chocolate onto a sheet of wax paper. Use immediately or refrigerate until ready to use. Then, use it as a garnish for your favorite dessert.

This recipe was very good. I did make a few changes, i.e. all strawberries rather than mixed berries and semi-sweet and white chocolate chips instead of the shaved chocolate. Would make this again, maybe using different kinds of fruit or different flavoring over the brandy extract.

Easy and delicious! I loved the chocolate-coffee flavors with the strawberries! And I'm always happy to find recipes for just two people. I'll definitely do this one again.

I made this just the way it said to and frankly I did not like the end taste with the coffee in it. I did tweek it (alot) and liked the way I ended up making it. Thanks for the idea.

Very delicious with a delicate mocha flavor. I made it with strawberries since raspberries are so expensive, but I think it would be much better with the raspberries. Husband agrees.

I made this on Valentine's Day. I served it in martini glasses since I did not have parfait glasses and it was very elegant and delicious! Also very easy and not too many calories. I used a few more berries than the recipe calls for and not all the chocolate topping.
