Make It

  • Heat dressing in Dutch oven or large deep skillet on medium-high heat. Add chicken; cook 3 min., stirring occasionally. Stir in broth; bring to boil. Add rice; stir. Return to boil; cover. Simmer on medium heat 5 min.
  • Add Neufchatel; cook 2 to 3 min. or until melted, stirring frequently. Add spinach. (Pan will be full.) Cook, covered, 1 min. or until spinach is wilted. Stir gently to mix in spinach.
  • Remove pan from heat. Let stand, covered, 5 min. Stir in tomatoes; top with Parmesan.

After finishing this dish, I had a few thoughts on how to improve and made some changes. First, I think they switched the rice and chicken stock measurements. It should be 1-1/2 cups of rice to two cups of chicken stock. Otherwise it is way too dry. I added 8 oz of sliced fresh mushrooms toward the end of cooking the chicken. I also felt that the ***** cheese was too overwhelming and tangy. I think 2 oz of ***** cheese and 1/4 cup light sour ***** may be more balanced. It could even be omitted altogether if you're not looking for a creamy version. I also reduced the spinach to 6 oz, which was plenty.

I made this for my husband and I for a Saturday night dinner, it was easy and tasted great, tasted like something we would order from a restaurant but pay twice as much for. I had to cook the rice part for longer then it required in the recipe to get the rice a little softer. This is not something I think my kids would enjoy though.

Rated 5 out of 5 by from My husband loved it! My husband loved it! I wasn't sure if I would like it because of the spinach but there is so many other tasty ingredients I barely noticed it. He loved it even more when he found out it was low fat. I used whatever Italian dressing I had on hand, I don't like the red pepper dressing. The tomatoes gave it a nice crisp taste.

Rated 4 out of 5 by from Quick and easy one pot meal. Quick and easy one pot meal. Even my picky (and diabetic) husband liked it. I used a whole 10 oz bag of spinach. Turn down heat at end so rice doesn't stick when all liquid has been absorbed. Will add more seasoning or salad dressing next time. Could use a little more flavor.

So easy, fast, delicious AND healthy! I didnt have instant rice on hand, so I used 1c. white rice and 2 1/4c. chicken broth and simmered for 20 minutes before moving on!

Rated 4 out of 5 by from Kids loved it. Kids loved it. I seasoned the chicken strips with garlic salt and pepper first and also added a little more broth and cream cheese. I sprinkle it generously with the parmesan cheese.

Rated 4 out of 5 by from Very good, but I felt that after cooking the rice, it was too dry. Very good, but I felt that after cooking the rice, it was too dry. I increased the chicken broth to two cups and it was creamy like the recipe description.
