After finishing this dish, I had a few thoughts on how to improve and made some changes. First, I think they switched the rice and chicken stock measurements. It should be 1-1/2 cups of rice to two cups of chicken stock. Otherwise it is way too dry. I added 8 oz of sliced fresh mushrooms toward the end of cooking the chicken. I also felt that the ***** cheese was too overwhelming and tangy. I think 2 oz of ***** cheese and 1/4 cup light sour ***** may be more balanced. It could even be omitted altogether if you're not looking for a creamy version. I also reduced the spinach to 6 oz, which was plenty.
Very good, but I felt that after cooking the rice, it was too dry. I increased the chicken broth to two cups and it was creamy like the recipe description.
