  • Mix cream cheese spread, 2 Tbsp. milk and garlic powder until blended.
  • Heat oil in large skillet on medium-high heat. Add red peppers and onions; cook and stir 4 to 5 min. or until crisp-tender. Stir in peas; cook 3 to 4 min. or until heated through, stirring frequently. Add shrimp, black pepper and remaining milk; cook and stir 3 min. or until heated through. Add cream cheese mixture and lemon zest; cook and stir 2 min.
  • Serve over rice.

How to Make it Meatless

Prepare as directed, omitting the shrimp.

Substitute

Prepare using whatever vegetables you have on hand.

We absolutely loved it, but next time I make it, there would be a couple things I would change. I would get shrimp without the tails or pull the tails off before I made it. It was hard to eat the dish when you had to stop each time you found a shrimp and had to pull or cut the tail off. Also, I let my sauce thicken a little too much and while it was still delicious, it got a little chunky once the rice was added. Otherwise awesome!

My only complaint was that the sauce was not quite as thick as I'd like..might cut the milk addition in half next time. Otherwise, easy and excellent!
