  • Heat oven to 375ºF.
  • Pound chicken to 1/4-inch thickness; place, top-sides down, on work surface. Mix cream cheese, onions, parsley and garlic; spread down centers of chicken breasts. Roll up, starting at one short end of each. Place, seam-sides down, in single layer in shallow pan.
  • Mix barbecue sauce, preserves and hot pepper sauce; brush 1/4 cup evenly onto chicken.
  • Bake 35 min. or until chicken is done (165ºF), brushing with remaining barbecue sauce mixture the last 5 min. Top with bacon.

Place chicken between sheets of plastic wrap on cutting board. Use meat mallet to pound chicken to desired thickness.

The easiest way to ensure that cooked meat or poultry is done is to check the internal temperature. Using an accurate food thermometer will take away the guesswork. Simply insert the thermometer into the thickest part of the meat or poultry, avoiding any bones if present. For whole poultry, insert the thermometer into the thickest part of one of the thighs, again taking care to avoid any bones.

Serving Suggestion

Serve with a mixed green salad and slice of whole wheat bread to round out the meal.

I substituted the apricot preserves for pineapple (cause that's what i had on hand). I also used 'real' bacon bits instead of making bacon (lazy!). This was a marvelous chicken recipe that we will keep on hand always.

Rated 5 out of 5 by from My husband and I love this recipe! My husband and I love this recipe! The first time was great. The second time I made this, I did not have all the ingredients. I changed fresh parsley for 1/2 tbsp of dried parsley, omitted the bacon, and switched apricot for orange marmalade. I almost want to say these changes made it even better. Regardless, this is an excellent recipe and we will be making this again and again.

Rated 4 out of 5 by from I didn't have all of the ingredients on hand so I changed it to fit what I had. I didn't have all of the ingredients on hand so I changed it to fit what I had. Instead of cream cheese and green onions I used goat cheese with Mediterranean herbs and Kraft Greek Vinaigrette. I lightly salted and peppered the chicken on both sides before assembling then baked it according to the original instructions. It turned out great. My husband and kids loved it.

Rated 4 out of 5 by from this was very good, i bought 4 chicken cutlets and pounded each with a frying pan since i didn't... this was very good, i bought 4 chicken cutlets and pounded each with a frying pan since i didn't have a mallet, seemed to work ok, i left out the parsley and hot pepper sauce since my husband and i are not fans, don't leave out the bacon! i almost did and glad i didn't, it goes very well with the flavor, will be making these again

Rated 5 out of 5 by from LOVED this chicken dish. LOVED this chicken dish. I cooked it in foil on the bbq for about 30 minutes and it was perfect...juicy and full of flavor. My only issue was that I had thick pieces of chicken breast and didn't pound it flat enough to properly roll it. Regardless, the flavors were excellent. Will definitely make again.

I didn't have fresh parsley, so I used dried. I also used onion powder instead of green onion. I substituted the BBQ sauce mixture with honey BBQ sauce. Overall, it worked out and even my toddler loved it!

The bbq/apricot sauce with the chicken and bacon was delicious but the cream cheese stuffing just clashed horrendously with everything else. I can't think of how to tailor the recipe to my liking.. it just didn't work for us. What a bummer!

Don't get me wrong, it was tasty, but pounding out chicken, rolling it up...that's a bit of a pain, especially when you're just going to cut it all up on your plate anyway. Its only pretty until you take a few bites.
