  • Beat Neufchatel, 1 Tbsp. milk and sugar in medium bowl with whisk until blended; stir in COOL WHIP. Spread onto bottom of crust.
  • Beat pumpkin, pudding mix, spices and remaining milk with whisk 2 min. (Mixture will be thick.) Spread over COOL WHIP layer in crust.
  • Refrigerate 4 hours or until firm.

How to Soften Neufchatel Cheese

Place measured amount of Neufchatel on microwaveable plate. Microwave on HIGH 10 sec. or until slightly softened.

Special Extra

Serve topped with additional COOL WHIP.

Rated 5 out of 5 by from i thought i would tell everyone that i didnt win the contest.but instead i got lots of praises for... i thought i would tell everyone that i didnt win the contest.but instead i got lots of praises for my pie.the person that won 3rd prize the people didnt like it.they liked mine better.after the judges tasted the pie then the rest of us at lunch time could taste the others.so, i would rather have at least 10 people come up to me to tell me my pie was superb than win and not like it.i like to turn a negative into a positive. but i do think when using an electric mixer i beat so much air into it that i have TOO much cream cheese.i saved it back though for something else.

Rated 5 out of 5 by from i have been making this pie for about 5 years now.. i have been making this pie for about 5 years now.. my children do not really care for traditional pumpkin pie and when i saw this recipe in the newspaper i figured on giving it a shot.. well it was a hit .. it is now a tradition to have this pie every thanksgiving! i usually have to make at least 3 pies ( for about 6 people) or the family will complain it runs out too quick.. this pie is simply delicious.. mu husband who does like regular pumpkin pie has now decided this pie is better! great recipe!

My mother started making this recipe when she found it in a magazine quite a few years ago-- (I was still living at home!) Now I make it for my family. This year I will be making 8 of these pies to serve the Single Airmen at my base. Hopefully this will give these kids that are away from home (many for the first time) something to remember over the holidays. (my husband and I are active duty Air Force) This is an easy and delicous pie. Thanks to whoever created it!

I made two of these pies for thanksgiving and everyone loved it from the kids to the picky eaters. I made two changes to the recipe I only added 1 and a half packages of jell-o I thought the jell-o flavor was a little to strong. I also only added half the milk I didn’t want it to be too runny. I’m sure the pie would have tasted just as good the original way. I would recommend anyone to make this pie it was very easy to make and very inexpensive.

I made it for my boyfriend for his birthday (he loves cheesecake and likes pumpkin pie, and I like both and wanted a smarter dessert). It tasted fantastic, and even with using a regular pre-made crust and cutting it into 8 slices, it was only 245 calories. Plus, each part actually tasted like the full-calorie/fat versions (although the "cheesecake" part was not as firm). I'm going to make it for Thanksgiving!

Rated 5 out of 5 by from This was one of the BEST low fat/low cal pies I have ever made! This was one of the BEST low fat/low cal pies I have ever made! It was so flavorful and creamy...my mom and I ate the whole thing in 2 days! I'm planning to make another one as soon as I can get to the grocery store. We did make a few minor changes: 1) Used half vanilla pudding and half butterscotch pudding 2) added a little vanilla to the pumpkin mixture 3) dropped the crust all together. It was delicious and very satisfying!!!!!!!!

Rated 5 out of 5 by from I really liked this recipe! I really liked this recipe! I changed 2 things, because I cannot have anything with any added sugar. I used Splenda instead of sugar with the pumpkin part, and I used sugar free Cool Whip with the cheese part. It came out really good! I served it at Thanksgiving dinner, and everyone really liked it. They thought that even though it didn't have sugar in it, it tasted delicious! I would highly recommend it.
