  • Cook spaghetti as directed on package, omitting salt.
  • Meanwhile, cook and stir vegetables in hot oil in large skillet on medium heat 3 to 5 min. or until crisp-tender. Add reduced-fat cream cheese, milk, Parmesan and oregano; mix well. Cook on low heat 3 to 5 min. or until cream cheese is completely melted, stirring frequently.
  • Drain spaghetti; place in large bowl. Add sauce; mix lightly.

Substitute

Substitute a green pepper for the red pepper.

Made this last night forgot the mushrooms but added fresh carrots and garlic for the dried herbs i mixed 1/4tsp oregano and 14tsp basil very good, my four year old ate it and my boyfriend and picky sister ate two bowls each so there were no left overs, word of advise double this if you want it for a meal as this is a great quick dinner.

Rated 5 out of 5 by from This was incredibly good. This was incredibly good. I used green bell pepper instead of the red. Next time I will use whole wheat pasta and try it with fat free cream cheese. I will vary the veggies a bit for some added color, possibly using red bell pepper instead of green, yellow squash, and definitely add a little garlic.

What I love about this recipe is the simplicity yet it taste as though I spent all evening in the kitchen! Both my husband and 6 yr old loved it! I added shrimp; but I also used garlic and Italian Seasoning for additional flavor. I will certainly be making this dish over & over!

Rated 5 out of 5 by from My family loved this recipe. My family loved this recipe. I would never have known it was a light recipe if I hadn't made it myself. Next time I may experiment and add some minced garlic with the veggies. I would absolutely recommend this to anyone.
