  • Heat oven to 375ºF.
  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat oil in large skillet on medium heat. Add zucchini, mushrooms and garlic; cook 3 to 4 min. or until zucchini is crisp-tender, stirring frequently. Add flour and seasonings; cook and stir 1 min. Stir in broth; cook 2 to 3 min. or until thickened, stirring frequently. Add Neufchatel; cook and stir 2 to 3 min. or until melted.
  • Drain pasta. Add to zucchini mixture along with the spinach, Parmesan and 1/2 cup mozzarella; mix lightly. Spoon into 2-qt. casserole sprayed with cooking spray; top with remaining mozzarella.
  • Bake 10 min. or until mozzarella is melted.

Preparing Perfect Pasta

Follow the package directions to ensure that enough water is used for cooking the pasta. Add the pasta to the boiling water and cook until al dente (tender but still a little firm to the bite), stirring frequently. To prevent pasta from sticking, add it slowly to plenty of boiling water and stir frequently while cooking. Adding oil to the cooking water is not recommended because some sauces may not cling to pasta coated with oil.

Serving Suggestion

Serve with fresh fruit and a side salad to round out the meal.

Rated 5 out of 5 by from I made this last night and it was out of this world! I made this last night and it was out of this world! it was plenty for 4 people. I ended up adding ground Italian sausage and it added just the right amount of flavor! Because of the added meat, i didn't use the entire 6oz bag of spinach, i used maybe about 3/4 of it. I also had to put the pasta in a 3qt dish instead of a 2 qt dish. I didn't use neufchatel cheese because my store didn't have any, so i substituted with cream cheese and you wouldn't even be able to tell the difference. I WILL DEFINITELY MAKE THIS AGAIN!! :D

I found that if you use finely shredded parm cheese from the bag, NOT fresh or grated, it's not dry and is super creamy. Add a little sour cream and it's even creamier. I've made this without spinach, with spinach, with several different kinds squash and zuccini, asparagus, chicken, sausage, and added a drained can of italian flavored diced tomatoes and it's super yummy, too. There are so many ways to vary the base recipes, the sky is the limit.

Rated 5 out of 5 by from My whole family loves this recipe! My whole family loves this recipe! The only thing I did differently was that I grated the zucchini. My kid wouldn't eat it when it was in slices. Grating it made it not noticable and they ate it and didn't even know :)

Rated 5 out of 5 by from Oh my gosh! Oh my gosh! this is one of the best recipes, I have ever made. It is completely vegetarian, which pleased my husband and I because we are vegetarian. It's DELICIOUS, I mean, DELICIOUS!!!!! It's easy to make, creamy, so healthy, and no guilt after eating, it's mainly vegetables! We are having leftovers tomorrow, even though we wanted to eat all of it today! :) Yes, we will have this over and over!!!! Thanks Kraft, good choice!

Rated 5 out of 5 by from This is a great recipe! This is a great recipe! Any time I make a new recipe I follow the recipe to the letter. Then the second time I make it I adjust it more to my taste. This is one of the few recipes that I feel needs nothing added... it's perfect the way it is. My family LOVED it!! Let me encourage you to follow the recipe before you try changing anything. It doesn't need it.

Rated 3 out of 5 by from Good easy recipe. Good easy recipe. For nosliwamm... it is all up to your good judgement, taste and what is in your fridge or pantry. Zucchini can be replaced by artichockes, sliced cooked carrots or butternut. This is the kind of recipe that takes all kinds of changes. I personnally always add more garlic and parsley or other fresh herb and use less Phila.

I think next time I'll make it without the flour for thickening. I think the cream cheese will make the sauce thick enough.

Rated 5 out of 5 by from Oh boy, this is good! Oh boy, this is good! I added a half chopped onion and of course more mozzarella (you can never have enough cheese)and about 1/2 c. pasta water for a bit more sauce. Wonderful, wonderful.
