The class loved it and at church, i didn't even get any of it, it went so fast. So i went home and made another batch. Not only is it delicious, it is by far the prettiest salad i have ever seen or made. And just a side note, don't be afraid to use fat-free Zesty Italian to cut the fat even more.

It was risky since I had never made it and to try a double recipe on such a big crowd made me nervous. It was delicious and everyone raved about it. It was colorful and had great texture and flavor. I forwarded this link to many of my guests because they asked for the recipe!!!

Boy, were we wrong-- this salad is soooo delicious! I ommited the onions and added mixed nuts. We both loved it. It's so different and tasty. Very colorful, too.

Your right lots of variations for this salad.
