I do make a cucumber salad from a recipe that was handed down through generations of my family. The first step in the recipe, after slicing the cucumber is to place them in a sieve over a bowl and generously salt them and toss. Allow the cucumbers to drain for about 30 minutes. After that I dress them with white vinegar, sour cream, dill and white pepper (additional salt if desired). It's a very refreshing summer salad. Hope this helps.

Rated 5 out of 5 by from I first had this at an ECFE potluck-- even the TODDLERS loved it! I first had this at an ECFE potluck-- even the TODDLERS loved it! (We had it without the feta or kalamata olives.) This recipie spread like wildfire. I can't wait to bring it to our summer family gatherings (with cukes & radishes fresh from the garden!). Who knew this much taste could be so easy! Even my friends who love their cucumbers sweet w/ vinager & sugar were surpised and immediately fell in love with this.

Rated 5 out of 5 by from This is a very good and unique tasting salad. This is a very good and unique tasting salad. The olives are awesome if you can find them. It could be an aquired taste though. I don't think the kids would like it, but it is a good salad and a break from the traditional. Good to make for a party, you wouldn't have to worry about someone else making it. I will definitely make it again. I didn't use all four cucumbers. I used two and my husband and I have leftovers.

Rated 3 out of 5 by from This was tasty. This was tasty. Instead of radishes I added cherry tomatoes and substituted black olives for kalamata. It was very good. It does become somewhat watery so you could seed the cucumbers, but even without doing that it was good. It's a pretty good bet that if you take this to a party, nobody else will bring the same dish!

The ribbons were very cute and made this dish look even more enticing. Next time I'm going to cut the cucumbers into smaller pieces though because the 1" cubes overpowered the taste and couldn't really taste anything else. Very good and pretty party dish!

Rated 5 out of 5 by from Kudos to the inventor of this recipe! Kudos to the inventor of this recipe! The ingredients were fresh, crisp and tangy.........reminded me of a salad I had in Athens! The presentation pushed it right over the edge, making it an impressive dish on the table. I made it two days ago and am making it for guests this coming weekend. It ages well also.

Rated 4 out of 5 by from I really enjoyed this recipe. I really enjoyed this recipe. It was very refreshing to eat especially during the hot weather. I would suggest that you wait until the last moment before placing the dressing, because it can get very watery. I also used japanese cucumbers as it has smaller and less seeds than the usual cucumber.

It was a big success and I have already handed out several copies of this recipe. I received compliments on it and one of them I rememer the most is from our CEO who told me it was very refreshing.
