  • Heat 2 Tbsp. oil in medium saucepan on medium heat. Add onions; cook 3 to 5 min. or until tender, stirring frequently. Add tomatoes, tomato sauce and vinegar; stir. Bring to boil; simmer on low heat 10 min., stirring occasionally.
  • Meanwhile, combine cheese and bread crumbs in pie plate. Beat egg in separate pie plate. Dip fish in egg, then in cheese mixture, turning to evenly coat both sides of each fillet. Heat remaining oil in large skillet on medium heat. Add fish; cook 3 min. on each side or until fish is golden brown on both sides and flakes easily with fork.
  • Serve fish topped with tomato mixture.

Special Equipment Needed


Substitute 35 finely crushed round butter crackers (about 1-1/4 cups) for the bread crumbs.
