  • Heat oven to 350ºF.
  • Place chicken, top-sides down, on cutting board; cover with ham and cheese. Starting at one short end of each, roll up tightly. Secure with wooden toothpicks.
  • Dip chicken in eggs, then roll in cracker crumbs until evenly coated on all sides. Place in 13x9-inch baking dish sprayed with cooking spray; drizzle with margarine.
  • Bake 40 min. or until chicken is done (165ºF). Remove and discard toothpicks before serving.

Serving Suggestion

Serve with cooked fresh green beans.

Rated 3 out of 5 by from my daughter and her husband liked it very much.my husband said it had too much cheese .next time i... my daughter and her husband liked it very much.my husband said it had too much cheese .next time i make it i will refrigerate it covered for a few hours before baking it so the breading will stay on better.i need to find a cheese that is milder in flavor than swiss.in my own opinion it is very good.i served it with steamed brocolli and rice litely seasoned with butter,lemon pepper and a small amount of soy sauce.

I made this for a dinner with friends and they couldnt believe that these werent store bought! I used pastramy instead of ham (because we are Muslims and dont eat pork) and it was delicious. But for some odd reason, I had to leave them in longer than the recipe suggested. Everyone else who commented seemed to have to leave it in for less time. Interesting...

Rated 4 out of 5 by from Chicken came out juicy and the coating was crunchy. Chicken came out juicy and the coating was crunchy. I used thin sliced ham and will probably use more than the one slice in the future. I also used colby jack cheese since it was on hand. I didn't have toothpicks so i used a smaller baking dish and foil to keep the breats together while baking. This also prevented the cheese from leaking out. Delicious!

Hubby was 'impressed' again - he's used to being a guinnea pig for 'new' recipes - he loved it! This is one that could be prepared to the 'battering' portion earlier in the day. For sure this will be in the recipe box as a favourite in our house!

Little did he know it was so easy. The chicken stayed moist and tender. I added a little salt, pepper, garlic powder, and parmesan cheese to the cracker crumbs just to spice them up a bit. I tried this recipe but insted of smoked ham I used Oscar Mayer fat free blogna and for the cheese I used Kraft fat free single cheese, it CAME OUT GRATE but my cheese melted and ran out of the chicken. but the family loved it. (Do any one know how I can make this recipe with out the cheese runing out?)

I made a few changes by using all low fat ingredients such as low fat provolone cheese, lean ham, reduced fat crackers, etc. I used Ritz crackers instead of saltines and added a little parm cheese to the mixture and it was delicious!
