  • Heat oven to 400ºF.
  • Place chicken between 2 sheets of plastic wrap; pound to 1/4-inch thickness.
  • Coat chicken with coating mix as directed on package; place on foil-covered baking sheet. Discard shaker bag and any remaining coating mix. Bake 10 min.
  • Top with cheese; bake 4 to 5 min. or until cheese is melted and chicken is done (170ºF). Meanwhile, heat oil in Dutch oven or large deep skillet on medium heat. Add garlic; cook and stir 1 min.
  • Add half the spinach; cook 1 min. or just until spinach starts to wilt, turning constantly with tongs. Add remaining spinach; cook 1 min. or just until wilted, turning occasionally. Serve with chicken.

Serving Suggestion

Serve with brown rice or whole wheat pasta to round out the meal.

    The chicken was good, but I didnt really care for the garlic spinach. I`ll make the chicken again for sure.

    Very tasty for such a simple recipe. Not much too it. I didn't change anything - except that I forgot to take chicken out so used Jane's chicken strips instead. I paired this with another recipe from this site - Ranch Mashed potatos (potatoes and cauliflower mashed together with ranch sauce). another healthy item. Delicious! Will make again
