Crispy Salsa Chicken

The salsa chicken was really tasty. Even though the breading on the chicken was more salty then usual. I would definetely make it again. The chicken was a big portion size and I was full really fast which is a good thing. Very delicious with a side of macaroni n' cheese and broccoli.

My husband and children loved this meal. Next time I'll use a different salsa. I cut the chicken breast in half, otherwise it's too much meat for one person. To be honest I was surprised that everyone in the family said they would eat it again!

For my daycare kids I used chicken tenders since they easier for little fingers and also made my own home made cilantro salsa. Usually there is a lot of chatter at lunch but this time it was quiet since everyone was eating so well. I also had a mom ask me for the recipe because her daughter could not stop talking about it!!

This recipe sounded like it had potential to be very good but when I made it I found a problem with it. As per directions, I added the salsa and cheese then baked the chicken for 5 minutes. However, when I took the chicken out the coating had become wet and mushy which neither myself nor my family cared for. I tried this again another time except I added only the cheese and served the salsa on the side. It tasted okay and worked out better because the coating stayed crispy.

Very good, kids loved it.
