  • Dip chicken in egg then in cracker crumbs, turning to evenly coat both sides of each breast.
  • Place in 13x9-inch baking dish sprayed with cooking spray; drizzle with butter.
  • Bake 20 min. or until chicken is done (165ºF). Top with salsa and cheese; bake 5 min. or until cheese is melted.

    My boyfriend and I enjoyed this recipe. Instead of salsa, I used just less than one can of Rotel. The chicken was a bit blander than I would've liked, but I anticipated that. We added some extra salsa/Rotel to our plates to give it some more flavor while we were eating. My boyfriend liked it and asked for it again so I will probably slip it into the rotation from time to time.

    A very good dish. My crumbs saltines didn't brown at all in the oven, maybe because they where fat free? Anyway the chicken was perfectly cooked and my kids loved it. I made fajitas with the leftover chicken....delicious. I served it with rice and broccoli.
